White Chocolate Strawberries

Fresh strawberries dipped in white chocolate are a such a treat--for Valentine's day, an anniversary, or a bride's dessert buffet table!

Equipment

  • Double boiler, or heat-proof glass bowl set over a small saucepan
  • toothpicks, to hold strawberries if they do not have long stems
  • wax paper or parchment

Ingredients
  

  • 1 11-ounce package white chocolate chips, good quality, such as Ghiradelli or Guittard
  • 2 teaspoons vegetable oil, with a neutral flavor
  • 1 pound strawberries, fresh

Decorations

  • 2 Tablespoons decorating sugar, pink, gold, red, silver
  • 2 Tablespoons chocolate sprinkles
  • 2 ounces semi-sweet chocolate chips, melted

Instructions
 

  • Wash hands, rubbing vigorously for 20 seconds with soap and water, before beginning strawberry prep.
  • Wash and dry strawberries. Make sure they are very dry.
  • Place white chocolate chips and oil in a double-boiler or a heat-proof glass bowl set over a saucepan with about 2 inches of water in it. Place the pan and bowl or double-boiler over medium-low heat so it comes to a simmer.
    Melt the white chocolate stirring frequently and gently.
  • When the chocolate is just melted, remove from heat and set the top of the double-boiler or the bowl next to the dry strawberries.
    Dip each strawberry into the chocolate, twirling so that the berry is about three-quarters covered in white chocolate.
    Lift the berry out of chocolate and twirl a little more to help any excess chocolate drip off.
  • Decorate the berry while still wet with colored sugar, sprinkles, or melted semi-sweet chocolate dripped on with a knife tip or fork.
    Place a sheet of wax paper or parchment under the decorating area to catch stray sprinkles, sugar, and chocolate drips.
  • Place the decorated berry on a baking sheet lined with wax paper to let the chocolate harden. (It won't take long!)
  • Refrigerate once the chocolate has set to help the berries stay fresh. Loosely cover the tray with a couple layers of plastic or transfer the berries to an airtight container.
  • Enjoy within 48 hours!

Notes

Nutrition and calorie note: The decorations listed won't be used in their entirety. In fact, you'll only need a little of the melted semi-sweet chocolate, so the nutrition facts are not very accurate. If anything, they list somewhat more calories, sugars, and fats for each strawberry.
Of course, the size of the strawberry makes a difference, too. Bigger strawberries will have more of all nutrients, including sugars! 😁
