Ingredients
  

  • 1 cup dates pitted and packed
  • ½ cup boiling water

Instructions
 Start Cooking 

  • Wash hands thoroughly, lathering with soap and rinsing with running water for 20 seconds.
  • In a small bowl, pour hot water over the dates. Use a spatula to press dates into the water. Let soak for 20 minutes.

  • Place dates and water in a blender, food processor, or high-sided container suitable for use with a hand-held (immersion) blender. Blend until dates are pulverized and pureed.

  • For later use, transfer the paste to an air-tight container with a capacity of 8 to 12 ounces, or use immediately in a recipe, substituting for sugar in a 1:1 ratio.

Notes

If your dates are very dry, add 2 more tablespoons of boiling water. You can also soak the dates in a cup of boiling water and then pour off about 2 to 4 ounces.
Note: When using a hand-held, immersion type blender, the paste may not be as smooth and uniform.
