Overnight Oats with Peanut Butter Powder

These puffy oats are an exceptionally delicious and nutritious make-ahead breakfast. They have peanut butter's flavor, protein, and fiber, without the fat or calories. It's great to wake up and pull a jar of these out of the fridge for a ready-made, healthy breakfast!

Equipment

  • 1 Jar, 7 to 8 ounces or use a medium bowl
  • 1 1-cup liquid measuring cup
  • 1 Dry measuring cup
  • 1 Spoon
  • 1 Whisk or use a fork or spoon

Ingredients
  

  • cup oats, rolled, "old-fashioned"
  • cup milk, use your favorite dairy or plant-based milk
  • 1 Tablespoon powdered peanut butter
  • 1 teaspoon maple syrup
  • ½ teaspoon vanilla, optional
  • dash salt, optional

Instructions
 Start Cooking 

  • Wash hands thoroughly for 20 seconds, lathering with soap and rinsing with running water.
  • Pour oats into a glass or ceramic jar or bowl that will hold 7 to 8 ounces, or use a small to medium bowl.
  • Whisk together the milk, powdered peanut butter, maple syrup, vanilla, and salt (if using).
    Note: Adding the flavorings to the milk in the measuring cup streamlines cleanup.
  • Pour the flavored milk over the oats and mix carefully. If using a jar, you can put the lid on and shake it up.
  • Refrigerate for at least four hours and up to 3 days. Stir right before eating.

Notes

If the oats absorb too much of the milk and appear slightly dry, add another splash of milk or some yogurt before eating. Be sure and stir them up, too!
To use regular peanut butter, swap in a Tablespoon and beat it into the milk with the other flavorings just as you would with the powder.
