Watermelon Popsicles with Coconut Milk

These refreshing watermelon popsicles combine juicy watermelon, coconut milk, lime juice, and a touch of honey or agave for a frozen treat that's light, fruity, and perfect for summer.

Ingredients
  

  • 16 ounces seedless watermelon cubed
  • 2 cups coconut milk boxed, unsweetened
  • 2 Tablespoons agave or honey
  • 2 Tablespoons lime juice about one lime, juiced

Instructions
 Start Cooking 

  • Before starting, wash hands thoroughly, lathering with soap and rinsing with running water.
  • In a blender, combine all ingredients and blend until smooth. Taste for sweetness and lime flavor. Add more agave and lime juice as needed, and blend again to combine.
  • Pour into popsicle mold, cover and insert sticks. Freeze for at least four hours.
  • To unmold, run warm water over the outside of the mold and slide out the popsicle. Enjoy this refreshing treat on a hot summer day or any day!
