How to Make Watermelon Popsicles
1️⃣ Wash your hands, lathering with soap and rinsing with running water for 20 seconds, before starting.

2️⃣ Remove the rind from half of a small, seedless watermelon. Cube the melon.

3️⃣ Combine the watermelon cubes, coconut milk, lime juice, and (affiliate link) agave nectar (or sweetener of choice) in a blender (affiliate link).

4️⃣ Puree until smooth.

5️⃣ Pour the mixture into popsicle molds (affiliate link).

6️⃣ Freeze until firm, about 4 to 6 hours.

7️⃣ Unmold and enjoy!
Recipe Tips
To easily release the frozen pops from their molds, run a stream of warm water over the outside.
🍉Even “seedless” watermelons may contain a few mature black seeds, not just small, paper-thin tan seeds. Remove any large seeds before blending.
Variations
🥥Use full-fat canned coconut milk for a creamier, more luxurious treat, instead of the lighter, unsweetened beverage sold in cartons. Keep in mind that this will increase calories and saturated fat.
🍋🟩Add lime zest to make the flavor sing. This will also create some texture in the treats. Keep this in mind if the little pieces of zest will bother you or children who may eat them.
🍋Swap in lemon juice for lime juice.
🍓Drop a handful of cleaned, hulled strawberries into the blender for a fruitier flavor and to increase the vitamin C content.
🆒 Toss fresh mint leaves into the blender with all the ingredients for a more cooling treat. You can also stir finely chopped mint into the mixture before freezing for flecks of color and cooling flavor.

Yield
The recipe amount is generous and will likely fill two standard popsicle molds that hold six to eight pops each. Freeze any leftovers in an ice cube tray (affiliate link) and enjoy the cubes iin sparkling water, smoothies, or mocktails!
Storage
Store popsicles in the freezer for up to 2 months. For best texture and flavor, enjoy within 4 weeks.
🩷Sweetener choice
I love the taste of agave with lime juice and watermelon, but you could also use honey if you don’t have agave nectar. Make them a good choice for a diabetic diet by swapping in stevia or monkfruit.
Look for a liquid formulation of monkfruit (affiliate link). For stevia, choose a Reb-A type like Splenda stevia for a sweet and pleasant flavor.

Nutrition Notes
💦🫗Excellent for Hydration
Watermelon is about 92% water, making these popsicles an especially refreshing choice during warm weather.
Rich in Lycopene, Potassium, and Vitamin A
Watermelon has the potential to support heart and vascular health with L-citrulline, an amino acid, and lycopene, a carotenoid with antioxidant properties.
L-citrulline appears to boost nitric oxide availability which can relax blood vessels, helping blood pressure and perhaps, exercise recovery. Lycopene may also help with blood pressure, and some studies indicate it has anti-cancer activity, particularly against prostate cancer.
Watermelon is also a good source of vitamin A, essential for growth and immune health, and potassium, an electrolyte mineral that helps with hydration while supporting blood pressure and bone health.
Low in Added Sugar & Calories
Unlike most store-bought frozen treats, these popsicles rely mostly on fruit for sweetness.
Light Yet Satisfying
The coconut milk beverage adds a touch of creaminess while keeping calories relatively low. The recipe calls for coconut milk that contains less saturated fat to keep them healthy, especially for your heart. But, you could use a richer version if this is not a concern.
FAQs
Watermelon does not freeze well. I would avoid it.
Of course! This will create a richer tasting popsicle with a few more calories. The lighter coconut milk beverage yields a more refreshing frozen treat.
Run warm water over the outside of the mold for 10 to 20 seconds to help release them.
Yes, a hand-held blender will get the job done with a couple of caveats. It may take slightly longer and your texture may not be quite as smooth.
